With a pumpkin carving party under our belt; we knew we had a tasty snack in store on Sunday. It's been a tradition that my husband and I look forward to every year and one that's actually better for you than candy!
Here's a quick, simple recipe - you'll enjoy every bit of this savory treat. Perfect for football noshing!
You'll need:
- pumpkin seeds
- paprika or chili powder
- sea salt
- pepper
- olive oil
Set your oven to 400 degrees. On a large baking sheet, drizzle olive oil. Rinse the pumpkin innards off your seeds and dry off on a clean towel. Spread an even layer on your baking sheet. Add a pinch of sea salt, chili powder and pepper. You can use paprika, too - I lean towards chili powder because I favor a little more heat. With a spatula, mix and coat the seeds thoroughly. Place in oven for 25-30 minutes {pending on your oven} and keep a watchful eye for a golden hue.
Let cool and enjoy. Happy healthy Halloween snacking!
P.S. A friend told us to add a dab of honey, too. Sweet and savory!

pumpkin seeds are one of my favorite fall snacks, crunchy and you can season them however you like!! now i just need to make it over to a pumpkin patch to pick out a pumpkin so i can get the seeds or i can just head to a store but a pumpkin patch is more fun!
I love snacking on pumpkin seeds too! Sometimes i just lightly season them with salt & they taste great ;)
